Darden K. Coors | MAD Greens, Head of Lettuce (Chief Executive Officer)
Darden Coors, a transactional lawyer with a passion for good food, is the chief executive officer of MAD Greens, LLC, a Golden, CO-based restaurant concept featuring fresh, made-to-order salads, wraps, Panini’s, soups and sides. Coors joined the MAD Greens in December 2013 to help launch the concept’s rapid growth plans.
Prior to MAD Greens, Coors held a variety of in-house counsel positions with Coors-family enterprises, including ACX Technologies, Inc., Graphic Packaging Corporation, and CoorsTek in Colorado as well as New Hampshire and Ottawa, Canada, and had a two year stint at a local Colorado law firm. She also served as Assistant General Counsel for Einstein Noah Restaurant Group, Inc. for four years where she honed her skills in the fast casual segment of the restaurant industry.
Coors is a fifth generation Coloradan. She loves her hometown of Golden, Colorado and has served on the board of directors for The Golden Civic Foundation there, holding positions of Auction Chair, Vice President and President. She received a Bachelor of Science degree in business administration from the University of North Carolina at Chapel Hill and a Juris Doctor from the University of Colorado, School of Law.
With a strong interest in other cultures, Coors’ has traveled abroad to numerous foreign countries, in Asia, Europe, Africa and South America. Since becoming a mother, her travels have been more confined to the U.S, and the two are well along on their way to visiting all of Major League Baseball’s ball parks. When home, Coors enjoys playing tennis and golf, and watching her son’s various sporting activities.
